Beetroot & Apple Soup

A gluten-free and vegan soup that will delight you with its sweetness and colourfulness!


1 small onion + olive oil 2 large beets 3-4 small domestic tart (overripe) apples 500 ml water 1 vegetable stock cube a sprig of fresh ginger 1/2 teaspoon dried meiram 1 teaspoon oregano 2 teaspoons red wine vinegar 1-2 teaspoons salt 100 ml oat cream


  1. Peel and chop the onion. Sauté the onion in a heavy-based saucepan.
  2. Dice the beetroot and apple (cut off the stems and seeds).
  3. Add the beetroot and apple to the saucepan with the onion and add the water and the vegetable stock cube, ginger, meiram, oregano and red wine vinegar.
  4. Cover and simmer until the beets are soft.
  5. Puree the soup.
  6. Add the oat cream and salt. Taste and season if necessary.
