Avocado pasta is easy to make and takes little time. The nutritional content of this version makes it a healthy everyday meal. In this recipe, the avocado is mashed like a pesto and the whole thing is ready in 15 minutes. Simple, quick and delicious!
Ingredients:500 g pasta 1 ripe avocado 100 ml vegetable cream or cream a handful of fresh baby spinach bunch of fresh basil 60 g cashew nuts 2 tablespoons nutritional yeast flakes 1 tablespoon lemon juice 2 tablespoons olive oil 1 clove of garlic (salt) (fresh parsley)
- Cook the pasta.
- Place all ingredients in a blender and puree until smooth. Add more cream or custard if needed.
- Stir the sauce into the pasta.
- Finely chop the fresh parsley and garnish.
Preparation tips Cashew cream was used for this recipe, but oat cream is also perfect. Shelled almonds, pine nuts and macadamia nuts are also good substitutes for cashews. If you're using a low-powered blender or stick blender, soak the nuts for at least 2-4 hours before using.
