Feta Casserole
An easy and healthy everyday meal that combines fresh vegetables and salty feta.


1 parsnip 1 small sweet potato 1 small courgette 1/2 eggplant 1 small carrot 100 g cherry tomatoes 1/2 red onion 3 cloves of garlic 2 tbsp olive oil 1 tablespoon dried oregano 1 teaspoon salt + black pepper 150-200 g feta + fresh basil


  1. Preheat the oven to 200°C.
  2. Wash and chop the parsnip.
  3. Peel and chop the sweet potato.
  4. Dice the courgette into fairly large pieces.
  5. Chop the aubergine and carrot.
  6. Put the vegetables, cherry tomatoes, red onion and garlic in a bowl and pour over the olive oil and oregano. Season with salt and black pepper. Mix well.
  7. Pour the vegetables into the baking dish and bake in the oven for about 30 minutes.
  8. Remove the pan from the oven and place the whole feta on top.
  9. Roast for another 10 minutes.
  10. Add fresh basil on top of the finished roast.
