Mini Eggplant pizzas with avocado and feta
These healthy mini pizzas are made from aubergine and are very easy to prepare.

Ingredients:

1 aubergine 1 avocado 70 g feta + sun-dried tomatoes + oregano or pizza seasoning

PREPARATION:

  1. Preheat the oven to 200°C.
  2. Cut the aubergine into slices just under a centimetre thick (thicker slices will be tough and thinner slices will be floppy).
  3. Place the slices on a baking tray on a baking sheet and sprinkle with salt.
  4. Bake the slices in the oven for about 15min.
  5. Crumble the feta into a bowl and dice the avocado. Mix together.
  6. Remove the eggplant slices from the oven and top with the feta-avocado mixture and sprinkle with sun-dried tomatoes.
  7. Put back in the oven for 5-15 minutes. Make sure they don't burn.
  8. Sprinkle with oregano or pizza seasoning.
  9. Serve :)
