Looking for a Friday night treat? Hot dogs and chips are your wow? Roasted sweet potato fries and falafel is a more nutritious and healthier alternative.
Ingredients:1 large sweet potato 1 large parsnip 1 teaspoon of salt 2 tbsp taco sauce 1-2 tsp smoked paprika spice + olive oil + fresh or frozen falafel
- Peel the sweet potato and parsnip if you like (you don't have to) and cut them into long sticks, a good centimetre thick, like French fries.
- Place the sticks in a bowl, add the oil and seasoning. Mix well (mix by hand for best results).
- Spread the sweet potatoes loosely on a baking tray on a baking sheet. Cook the fries in two batches if necessary. Bake the fries in a 225°C oven for 15 minutes. Check regularly if done and bake more when necessary.
