Blueberry and quark crêpes

Enjoy delicious Blueberry and quark pancakes in the morning or whenever you want to treat yourself!


400 g vegan soy quark 1 ripe banana 120 g gluten-free white flour mixture 3 tablespoons coconut or cane sugar 1 teaspoon baking powder 2 tablespoons cornstarch 1/2 teaspoon cardamom 1/2 teaspoon vanilla powder 160 g blueberries for fryin oil
  1. Mash up the banana in a bowl. Mix in the soy quark.
  2. Mix the dry ingredients together and then add into the banana and quark. Mix. Lastly, carefully mix in the blueberries. Set aside for about 30 minutes.
  3. Heat the oil in a frying pan. At medium heat, fry small crêpes for a few minutes on either side. Do not flip over until the surface has set.
  4. Serve for breakfast or snack with maple syrup, for example.
