Enjoy delicious Blueberry and quark pancakes in the morning or whenever you want to treat yourself!
Ingredients
400 g vegan soy quark 1 ripe banana 120 g gluten-free white flour mixture 3 tablespoons coconut or cane sugar 1 teaspoon baking powder 2 tablespoons cornstarch 1/2 teaspoon cardamom 1/2 teaspoon vanilla powder 160 g blueberries for fryin oil
PREPARATION
- Mash up the banana in a bowl. Mix in the soy quark.
- Mix the dry ingredients together and then add into the banana and quark. Mix. Lastly, carefully mix in the blueberries. Set aside for about 30 minutes.
- Heat the oil in a frying pan. At medium heat, fry small crêpes for a few minutes on either side. Do not flip over until the surface has set.
- Serve for breakfast or snack with maple syrup, for example.
